Jiggs dinner with a ham. Its a Newfoundland thing. Smells like moms kitchen all over.

The tub of salt meat even shows the flag of Newfoundland and Labrador. You have to soak it overnight and change out the water or boil it and pour off the salt water over and over until it tastes right. Its a pain in the ass but it is flavor for the vegtables.

Its kind of like corned beef dinner with carrots cabbage turnip potatoes and onions. The sack has split green peas in it to make a peas pudding (its like super thick pea soup)
The ham is applewood smoked.

I'd never heard of Jigg's Dinner until I worked in Fort Mac. They'd offer it for supper in camp once in a while and the Newfoundlanders would get excited. Of course the cooks could never get it right like back on the Rock, or so said the boys.

It's amazing the cultural education you can get up there, if you are interested in people. The whole world goes through that place.

Until You Canadians get on board with some Biscuits n Gravy and import or start some stocked ponds of channel Catfish I will have to continue to think there is no taste for food North of the Wall.

I am from NOLA - at a young age you learn to either cook or clean dishes - there is no other option :)

I can either fry it, or make you some gumbo that would have you trying to replicate it (and failing miserably because I am awesome) and hunting for okra recipes of your own.

Tomato and lemon/lime juice are a good addition to anything with okra because it naturally helps with the slime-factor. Onion and garlic pair well, as does bacon. But then again, what doesn't go well with bacon?
I hated okra until my daughter in law from Brazil made it. She's an amazing cook and I can't replicate her recipes either LOL.

You’re probably too late 😂 Does look good. I’m curious of the recipe.
It's gone, lol. But the slice looks like what you see on the top between the bread. Actually the croissant.

Recipe is simple
2 boxes Pillsbury pop and fresh croissants
1 onion, tomato, jalepeno chopped
1 1/4 lb chop meat
1 pak Fajita mix

take a big tray, i use a very large pizza tin. Make an 8 point star, overlapping at the base, then do it again to make a 16 point star.
Put all the other stuff in the pan, stir fry till brown.
Pile that on the ring, then fold up and over the croissant ends. Tuck them into the inside bottom Bake at 350 until the top looks brown. Then in the center of the ring put a bunch of taco fixins. Serve :)
