12 hours? I ordered some flour...i hope i get some so i can get bread making. I am left with cake and pastry flour and that is not good for bread.
12 hours is the first rise, then the next one is 8 hours, then 1-2 hours more. It's an hours work spread out across a day. Feeding it the second time pays off in texture, taste and longevity.

Doing bread today 10 am start yest, 10 pm, feed and knead, 9 am form, let rise for 1-2. Bake. I took some pics along the way to show the advantage on a second rise for some of my fellow bread heads. :)

First rise....This is 3 cups/12 hours. It's now alive, but notice how much space is left in the bowl

Second rise.........it's godzilla. Look at the bowl now.....only added 2 cups flour for the 2nd feed, and it's to the top!

Now I cut that in half.........makes a round and then cut the other half into 4 pieces for the rolls. Form and let rise.

I've baked more than my share of bricks and wet yeasty beasty's, lol. Rye in particular, is humbling. The loaf above is a white bread, very close to Pane di Casa from the Bronx/ArthurAve. Cut the slices at 3/4" and make french toast...ummmm!

Well time for me to go...diner time for me.
Gonna make chicken fried rice and have sweet and sour chicken balls and fresh green beans....small salad first though .
Glass of oj to.
Then its time to work in room number 1...already worked in room 2 and also my veg room. Just water change for clone tubs.
Hope everyone has something good for supper tonight.

I have really been upping my dinner game...its like a restaurant around here.
This was last nights dinner...a special request for my birthday boy. I have the pizza dough perfected ! I will never buy dough again.

Cherry upside down cake. This has sour cream in the batter and it made it like a plain cruller with a sour cherry topping.
