The boudin I've had was made from ground pork, rice,veggies and lotsa spices.
Rolled in panko and deep fried.
Haven't had that in a bit.

Slowdrawl got it. It's spicy sausage mixed with rice, onion celery herbs and spices maybe some bell pepper. Rolled in a cornmeal and fried. Very tasty!!

I use a modified Pioneer Woman Recipe. Eliminate the apple cider and turmeric and add garlic and bay leaves. Oh and 4 Skinless breasts instead of a whole chicken.
